Ingredients

  • 185g Butter at room temperature
  • 1tsp Vanilla essence
  • 1/4 Cup caster sugar
  • 1/3 Cup brown sugar, firmly packed
  • 1 Egg, lightly beaten
  • 1 1/2 Cups self-raising flour, sifted
  • 2 Cups choc chip bits (a mixture of dark, milk and white)
  • Vanilla ice cream to serve

Method

  • Step 1
    Beat the butter, vanilla essence and sugars in a large bowl with electric mixers until light and fluffy.
  • Step 2
    Add the egg and beat until well combined.
  • Step 3
    Mix in the flour and choc chips with a spoon, until the mixture has just come together.
  • Step 4
    Place the cookie dough in a large Q Ware fry pan and press down to evenly spread.
  • Step 5
    Cover and refrigerate for an hour or until firm.
  • Step 6
    Preheat barbecue for indirect cooking. On a Weber Q use a convection tray and trivet.
  • Step 7
    Once the barbecue is preheated, set the control knobs to the roast setting. Place the Q Ware Fry Pan in the center of the grill, ensuring handle is removed.
  • Step 8
    Bake the cookie for 12 to 14 minutes or until lightly golden. Remove from the barbecue using the detachable handle.
  • Step 9
    Allow to cool for at least 5 minutes on a cake cooling rack.
  • Step 10
    Serve with vanilla ice cream.
